It's National Blueberry Popover Day on March 10th. What's a popover? It's an airy roll that puffs up when baked, sometimes popping right out of the pan. It's light and crispy on the outside, while the inside is warm and hollow. They can be filled with custards, creams, or fruits—especially blueberries. Popovers are a type of food similar to Yorkshire pudding. They can also be served with savory combinations. To make a popover, first use eggs and milk that are at room temperature. Thin batter is best because it has enough air so when it cooks the steam will expand the batter. The egg proteins help it hold its shape. A hard crust forms, and eventually the pastry becomes flaky.  

National Blueberry Popover Day is an annual food celebration feasted on March 10th.
