Chop suey, which means “assorted pieces,” is a dish that has become very popular in American Chinese cuisine. It is typically made of a meat, be it pork or chicken or beef or fish or shrimp, and eggs and vegetables cooked in a thick and syrupy sauce. It is usually served with rice, but can also be served with egg noodles. Some say chop suey was invented in America by Chinese Americans. Others believe it hailed from Taishan in China, where a lot of Chinese people immigrated from to America. One other story claims that a Chinese cook quickly threw together some leftover ingredients to appease drunk miners who’d wandered in after closing.
