National Gazpacho Day - 2021-12-06
What is National Gazpacho Day?
Gazpacho or Gaspacho is a cold soup made of raw, blended vegetables. It originated in the southern regions of the Iberian peninsula and spread into other areas. Gazpacho is widely eaten in Spain and Portugal, particularly during hot summers, since it is refreshing and cool. Today’s gazpacho can include many different ingredients, but tomatoes are often not part of the mix. Ingredients like avocados, grapes, watermelon, cucumbers, parsley, and seafood are common replacements for the traditional version of this soup. Gazpacho is typically served with garnishes like chopped eggs, bread crumbs, onions, scallions, and peppers.
