An ice cream sandwich is a layer of ice cream wedged between two slices of cookie or wafer. The original ice cream sandwich first came onto the scene from a street vendor in Bowery, New York. He was never identified but his invention inspired an entire industry to create and innovate this delicious summertime snack. Recipes for ice cream sandwiches use almost anything for the outer layers, including cakes, biscuits, wafers, and anything else you can imagine.
