Julienne cut fries are potatoes that are cut up in extremely thin pieces. When fried, they become extra crispy and are a delicious treat. The Julienne cut is famous in French cuisine and involves cutting any vegetables into thin strips. Such a cut is involved in dishes such as Julienne Soup, from an 1877 cookbook by Eneas Dallas.

Julienne fries, also called "shoestring fries", are celebrated on August 12th of every year.
