The filling is a delicious lemon curd and the topping is a fluffy, white, meringue. Meringue is made with egg whites that are beaten stiff with sugar and baked low and slow until they come out hard and golden. Meringue is very versatile and can be adapted in to many different desserts and sweets. One of the best of these meringue desserts is the one we celebrate and enjoy today, the lemon meringue pie.
