The collection of maple sap to make maple syrup dates back long before Europeans settled in America. The Native Americans would start by building "sugar bushes" where they would boil the sap with hot stones. When the European settlers arrived, they boiled sap over an open fire to make syrup.
The production of maple syrup was first developed by indigenous peoples of North America and later adopted by European settlers in the seventeenth century. It has been refined since the 1970s with technological improvements.
