Peach Melba is a dessert that consists of peach and raspberry sauce accompanied by vanilla ice cream. The dish was introduced in 1892 or 1893 and developed at the Savoy Hotel, London, to honor the Australian soprano, Nellie Melba. Australian singer of great popularity, coloratura Nellie Melba, became a Dame of the British Empire when she published Melodies and Memories in 1925. She returned in 1926 to Australia, where she became president of the Melbourne Conservatorium. Melba toast and peach Melba were named for her.

National Peach Melba Day is celebrated every year on January 13th!
