What is National Shawarma Day?
The Levantine Arabs have been roasting meat over fires for centuries. The shawarma, which means 'turning' in Arabic was originally made with lamb or chicken; today's version may be turkey instead of beef if you're not feeling too adventurous! It is imperative that this dish be cooked slowly on an open flame so as to prevent drying out the delicious spices like cumin and coriander seeds used during the cooking process (not all spit-roasters do this).
